We are going global again! We’ve reached out to our friends in the global culinary community and have invited them to Vancouver.  The result? Five of the world’s culinary best join us for a series of delicious collaborations with our own city’s top talent.  

Burdock & Co. Chef and Owner Andrea Carlson welcomes Chef Fumihiro Matsumoto and Maitre d’ Kenji Kawamura of Kantera Restaurant in Tokyo. This farm-to-table multi-course dinner will combine each of the chef’s favourite culinary inspirations, using fresh sustainable seafood and locally-grown ingredients. Hot off the heels of a recent trip to Japan this spring, Chef Andrea and her team are excited to welcome both chefs and offer visitors a one-of-a-kind culinary experience.

Talking of their time in Japan, Chef Andrea states: “It was our first night in Tokyo and we happened upon Kantera. We had the most amazing dining experience, the yuba and uni were transcendent, and the chilled soba noodles in sesame were like nothing we had ever tasted. Mr. Kawamura is a natural wine enthusiast and had some incredible locally made wines for us to try. Simply put, Kantera was one of the best dining experiences we had in the country.”

Sommelier Jesse Walters will be working together with Mr. Kawamura to create bespoke sake and natural wine pairings for the dinner.

About Chef Andrea Carlson

For over a decade, Chef Andrea Carlson has left a resounding legacy on Vancouver’s dining scene. Her commitment to homegrown ingredients and active support of local food systems has led to strong relationships forged with farmers and growers, including previously unknown producers who have now caught the attention of chefs citywide.

Born and trained in British Columbia, Andrea studied organic farming and landscape design before making her mark on some of the best restaurants in Vancouver. One of these was Sooke Harbour House, where organic ingredients are grown on-site; the wealth of menu possibilities this opened up inspired Andrea and motivated her to dive further into the world of small-scale organic gardening. The close connection between food and nature became a foundation of Andrea’s culinary philosophy, and she carried it with her to Vancouver Island where she created a scratch kitchen garden for Tofino Botanical Gardens. When she relocated to Vancouver to accept the role of chef de cuisine at Raincity Grill, Andrea developed Vancouver’s now-legendary 100-Mile Menu and became a driving force behind the city’s locavore movement. She then assumed the position of executive chef at Bishops, and during her time there led the restaurant to winning Vancouver magazine’s Best Regional Restaurant award twice.

Now Chef / Owner at Burdock & Co, Andrea’s love for the land surfaces in organic, seasonal plates influenced by B.C.’s diverse environments. Her signature style of cooking – delicate, earthy and vibrant – captures the essence of farm-to-table dining, and is a tangible reminder of her lasting impact and leadership within the culinary community.

About Chef Fumihiro Matsumoto

Chef Fumihiro Matsumoto of Kantera Restaurant in Tokyo has a diverse background in Japanese cuisine. He has worked in a variety of culinary contexts thoughout Japan and Asia. Informed by his extensive experiences, his style expresses a forward-thinking approach to traditional principles of Japanese cuisine.
